Cranberry and Broccoli Quinoa Salad with Orange Vinaigrette
Serves 4 (as a side)
Ingredients:
- 1 8-8.5 oz. package 90 second Quinoa, cooked
- 1 cup Decas Farms dried cranberries
- 1 cup broccoli florets, steamed
- 2 tbsp chopped green onion
- 1 cup walnuts, chopped
Dressing:
- 4 Tbsps fresh orange juice
- 1 Tbsp of extra virgin olive oil
- 1/4 cup apple cider vinegar
- salt & pepper
Preparation:
- In a large bowl, combine broccoli, quinoa, cranberries, green onion, and walnuts.
- In a small bowl, whisk orange juice, olive oil, vinegar, salt and pepper.
- Drizzle as much dressing into salad bowl as desired, toss to combine.
