Cranberry Apple Crisp
Ingredients - Filling
- 2 medium-large apples, cored & sliced
- 2 cups Decas Farms fresh or frozen cranberries
- 2 tablespoons lemon juice, 1 lemon
- 2 teaspoons cornstarch or arrowroot starch
- 3 tablespoons coconut or brown sugar
- 3 tablespoons maple syrup
- 1 pinch each nutmeg & ginger (optional)
Ingredients – Topping
- 1 cup gluten-free rolled oats
- ½ cup almond meal flour
- ½ teaspoon sea salt
- ¼ cup coconut or brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons coconut oil or butter, melted
Directions
1.Preheat oven to 350 degrees. Grease a 2 qt. casserole dish.
2. In a bowl, mix the apples, cranberries, and lemon juice. Sprinkle with cornstarch, sugar, maple syrup, and spices and mix to combine. Pour into greased casserole dish and spread evenly.
3. In a separate bowl, combine the dry ingredients for the topping. Add the coconut oil and use fingers to distribute the oil evenly forming crumbles. Distribute topping evenly over filling.
4.Bake 45-50 minutes until golden. The apples will be soft and filling will be bubbly. Cool 30 minutes. Top with ice cream and serve.
